Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the pastry into six squares.

  2. Place half of a sausage on one end of a square.

  3. Wet the edge of the pastry and roll it over carefully, leaving the ends open.

  4. Mark the top three or four times with the back of a knife.

Bake

  1. Brush the rolls with beaten egg.

  2. Place the rolls on a baking sheet and bake at 400°F (200°C) for about twenty minutes.

What each ingredient does

Flaky or short pastry
Forms the crisp, flaky outer casing that wraps the filling.
Egg
Browns the pastry surface and gives the rolls a glossy finish.
Sausage meat or sausages
Provides the savory filling that cooks inside the pastry.

The step that matters

Wet the edge of the pastry and roll it over carefully, leaving the ends open.. Moisture helps the pastry edges seal, so the filling stays enclosed while baking. Rolling gently avoids tearing the layers, which would let fat and juices escape.
