Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cornish Pasties

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Roll out the pastry to ¼ inch thickness.

  2. Cut the pastry into large rounds with a round cutter.

Make the filling

  1. Cut the beef and potatoes into small dice.

  2. Season the diced beef and potatoes with salt and pepper.

  3. Mix the seasoned beef and potatoes with the chopped onion.

Assemble and bake

  1. Place equal amounts of the mixture in the center of each pastry round.

  2. Wet the edges of the pastry.

  3. Fold the pastry over to enclose the filling.

  4. Crimp the edges to seal.

  5. Brush the pasties with beaten egg.

  6. Place the pasties on a greased baking sheet.

  7. Bake in a moderate oven at 350°F (175°C) for about 30 minutes.

What each ingredient does

Plain short pastry
Forms the sealed case that holds the filling and bakes up crisp and flaky.
Beef steak
Provides the main meat filling that cooks through during baking.
Potatoes
Add bulk and soft texture to the filling as they cook in the enclosed pastry.
Onion
Adds savory flavor and moisture to the filling as it softens during baking.

The step that matters

Crimp the edges to seal. A tight seal keeps juices and steam inside the pasty; a weak seal lets filling leak out and the bottom can turn soggy.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, pepper):

  1. Capsicumfits about as well
  2. Tomatofits about as well
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
