Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Melt the butter and mix it with the flour and sugar.

  2. Beat in the eggs and add the milk.

  3. Mix well and let the batter stand for 2 hours.

Bake and serve

  1. Preheat the oven to 350°F (175°C).

  2. Pour the batter into well-greased saucers and bake for 20 minutes.

  3. Stack the pancakes on top of each other with apricot jam or other jam in between, or serve them separately with preserves folded inside.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Flour
Forms the structure of the batter and sets the pancakes as they bake.
Butter
Adds richness and fat that keeps the pancakes tender.
Milk
Provides liquid that hydrates the flour and makes a pourable batter.
Sugar
Adds sweetness and helps the pancakes brown in the oven.

The step that matters

Let the batter stand for 2 hours. Resting lets the flour fully hydrate and the gluten relax, which helps the pancakes set evenly and avoids a tough, uneven texture.
