Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm jelly as it cools.
Egg yolk
Thickens the mixture gently when stirred over low heat and adds richness.
Orange juice
Provides the main liquid and the orange flavour and acidity.
Saccharin tablets
Add sweetness to the jelly.

The step that matters

Pouring the hot mixture over the egg yolk. Adding the hot liquid slowly while stirring constantly raises the yolk's temperature gradually, so it thickens smoothly instead of scrambling into lumps.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (egg, brandy):

  1. Currantfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Orangethe original

Fit is the average pairing score against egg, brandy. Candidates are from the same food group and used in at least 100 recipes.
