Ingredients

Directions

Prepare the cake

  1. Cut the bottom of the sponge cake level to make it stand firmly in the glass dish.

  2. Make a small hole in the top of the cake and pour in the sherry mixed with brandy to soak it nicely.

  3. Let the cake soak for two hours.

  4. Stick blanched almonds, cut in strips, all over the top of the cake.

Make the custard and serve

  1. Prepare the custard with sugar, cream, and milk, and pour it into the dish around the cake when slightly cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cake
Absorbs the sherry and brandy, providing a soft, moist base for the dish.
Sherry or raisin wine
Soaks into the cake, adding moisture and a fruity, aromatic flavour.
Brandy
Adds alcohol-based aroma and depth of flavour to the soaking liquid.
Cream
Enriches the custard, giving it richness and a smooth, creamy texture.
Sweet almonds
Add a nutty flavour and a crunchy, decorative texture on top.

The step that matters

Let the cake soak for two hours. The sponge must have time to absorb the liquid evenly; soaking too briefly leaves dry patches, while the cake must still hold its shape so it does not turn mushy.

Swap the almond

How well each one fits the dish's main ingredients (sherry, brandy, sugar, cream, milk):

  1. Almondthe original
  2. Cocoafits about as well
  3. Chestnutfits less well
  4. Walnutfits less well
