Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the icing

  1. Mix the ground almonds and castor sugar together.

  2. Beat in the yolk and whites of the eggs to form a stiff paste.

  3. Add the almond flavoring.

Apply and bake

  1. Dip a broad knife in hot water and smooth the icing on top of the cake.

  2. Place the cake in a cool oven at 300°F (150°C) until the icing is firm and dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground almonds
Provide the bulk and nutty flavor of the icing paste.
Castor sugar
Sweetens the paste and helps it bind with the eggs.
Eggs
Bind the almonds and sugar into a stiff paste that sets when baked.

The step that matters

Baking the icing until firm and dry. Baking at a low, cool temperature sets the egg-bound almond paste without browning it. Too high a heat would color or toughen the surface before it dries through.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
