Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Meat Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Chop the meat finely and mix it with parsley, salt, pepper, and gravy.

Assemble the patties

  1. Roll out the pastry thinly and cut it into rounds.

  2. On half of the rounds, place a spoonful of the meat mixture.

  3. Wet the edges of the pastry.

  4. Cover with another round of pastry and press the edges together.

  5. Make a small hole on top.

Bake

  1. Place on a greased baking sheet.

  2. Bake at 400°F (200°C) for about 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked meat
Forms the savoury filling that gives each patty its main body and flavour.
Gravy
Adds moisture and savour to the meat so the filling stays tender rather than dry.
Short pastry
Forms the crisp, tender shell that encloses the filling and browns in the oven.

The step that matters

Pressing the pastry edges together. Wetting the edges before pressing helps the two rounds seal. A tight seal keeps the filling from leaking out and steaming the pastry from inside during baking.

Swap the parsley

How well each one fits the dish's main ingredients (meat, pepper):

  1. Thymefits about as well
  2. Parsleythe original
  3. Rosemaryfits about as well
  4. Marjoramfits about as well

Fit is the average pairing score against meat, pepper. Candidates are from the same food group and used in at least 100 recipes.
