What each ingredient does

Strawberries
Provide the fruit, flavor and pectin-bearing body that the jam is built on.
White sugar
Sweetens the jam and helps it set and keep by binding water and preserving the fruit.

The step that matters

Boil the mixture together for 15 minutes. Sugar and fruit must reach a rolling boil long enough for the mixture to thicken and set. Too short a boil leaves runny jam, while overcooking can darken the color and flavor.
