Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Lancashire Hot Pot

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Trim the fat from the mutton and cut it into neat cutlets.

  2. Layer the cutlets in a deep fire-proof casserole, seasoning with pepper and coarse sea salt.

Layer and bake

  1. Slice the potatoes and onions lengthwise, then layer them alternately with the meat in the casserole, seasoning each layer.

  2. Pour in the broth or stock, then cover with overlapping slices of potatoes.

  3. Dot the top with butter, cover with a lid, and bake at 350°F (175°C) for 3 to 3.5 hours.

  4. Remove the lid for the last 30 minutes to brown the potatoes.

  5. If the pot appears dry, add more broth as needed.

  6. Just before serving, pour in the hot gravy.

What each ingredient does

Neck of mutton
Provides the meat that becomes tender and flavourful during long, slow baking.
Potatoes
Form the overlapping top layer that softens inside and browns when the lid comes off.
Onions
Layered with the meat, they soften and add sweetness to the savoury juices.
Broth or stock
Provides moisture so the layers steam and the meat does not dry out during baking.
Butter
Adds fat to the top layer, aiding browning and richness of the crust.

The step that matters

Removing the lid for the last 30 minutes. Uncovered heat lets moisture escape and the potato surface dry and brown. Leaving the lid on keeps the top pale and soft, while removing it too early can dry the dish.
