Vegetable Marrow

Ingredients

Directions

  1. Gather young vegetable marrows when they are the size of a large egg.

  2. Boil the marrows in salted boiling water for 15 minutes and serve whole.

  3. For cold serving, drizzle with oil and vinegar.

  4. If marrows are not young, peel them and remove the seeds, cutting as little as possible.

  5. Cook and eat the entire marrow once cut to prevent mildew.

  6. Mash the marrows or steam and cut into fillets.

  7. Fry the fillets in batter or bake in layers with grated cheese and melted butter.

  8. For a French style, cut marrows in half, scoop out seeds, sprinkle with salt, and drain water.

  9. Fry each half in oil and fill with a stuffing of breadcrumbs, parsley, and onion moistened with broth or milk.
