What each ingredient does

Chestnuts
Give the soup its body and sweet, starchy flavour when chopped and strained.
Butter
Fat that browns the vegetables and adds richness and aroma.
Onions
Provide savoury sweetness and aromatic base as they soften and brown.
Leeks
Add mild onion-like flavour that deepens the soup's base.
Stock
Forms the liquid base that carries the flavour and thins the puréed soup.

The step that matters

Cooking the chestnuts until the second shell comes off. Chestnuts must be cooked long enough to soften the inner skin so it peels away cleanly; undercooked nuts resist peeling and leave bitter skin in the soup.
