Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which cooks quickly and stays moist when roasted whole.
Butter
Adds fat and richness, and basting with it helps the skin brown and stay moist.
Bread crumbs
Absorb juices from the chopped livers and butter, giving the stuffing body and moisture.

The step that matters

Basting with butter while roasting. Pigeon is lean and dries out quickly, so regular basting keeps the meat moist and helps the skin brown evenly.

Swap the parsley

How well each one fits the dish's main ingredients (butter, bread, pepper):

  1. Parsleythe original
  2. Sagefits about as well
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
