  2. Heat the fat in a pan until light brown, then remove the chops.

  3. Fry the sliced onion in the same pan.

Simmer

  1. Pour away the fat and return the chops to the pan with half the grated carrot, pepper, salt, and water.

  2. Cover tightly and simmer slowly for two hours.

Thicken and serve

  1. Thicken the mixture with flour mixed with ketchup and Worcestershire sauce.

What each ingredient does

Mutton chops
Main protein; long, slow simmering breaks down connective tissue so the meat becomes tender.
Flour
Thickens the cooking liquid as its starch swells and gelatinises when heated.
Onion
Frying it softens and sweetens it, adding aroma and depth to the stew.
Ketchup
Adds tomato sweetness and acidity, rounding out the savoury sauce.

The step that matters

Thickening with flour. Flour must be fully mixed with the ketchup and Worcestershire sauce before it goes in, otherwise it forms lumps. The mixture then needs to boil for a few minutes so the starch cooks fully, thickening the sauce and removing any raw floury taste.

Swap the onion

How well each one fits the dish's main ingredients (mutton, flour, ketchup, sauce, carrot, turnip, pepper):

  1. Leekfits better
  2. Shallotfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against mutton, flour, ketchup, sauce, carrot, turnip, pepper. Candidates are from the same food group and used in at least 100 recipes.
