What each ingredient does

Rice flour
Thickens the sauce so it clings to the meat and rice.
Apple
Softens into the onion base, adding gentle sweetness to balance the curry spices.
Butter
Carries the onion and apple flavour and adds richness to the sauce.
Lemon juice
Adds acidity that brightens the sauce and balances the sweetness of the apple and cocoa-nut.
Cocoa-nut
Contributes coconut milk and grated flesh for body, moisture and a mellow sweetness.
Cream
Adds richness and a smooth, velvety texture when stirred in at the end.

The step that matters

Pouring the flour mixture into the boiling stock. Rice flour thickens only when heated, and adding it to liquid without first mixing it smoothly with cold liquid can leave lumps. Stirring until the sauce boils lets the starch swell evenly into a smooth sauce.
