Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Oyster Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the oysters

  1. Scald the oysters in their own liquor, then drain and chop them finely.

Make the filling

  1. Soak the bread crumbs in cream and mix with parsley, chives, anchovy, pepper, and melted butter.

  2. Combine this mixture with the chopped oysters and add the beaten egg.

Bake and serve

  1. Butter scallop shells and fill them with the oyster mixture.

  2. Sprinkle bread crumbs over the surface and bake in a 350°F (175°C) oven until delicately browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender body of the pudding.
Bread crumbs
Soak up the cream and add bulk, giving the filling a soft, set texture.
Egg
Binds the mixture so it holds together and sets when baked.
Cream
Adds moisture and richness, keeping the filling tender as it bakes.
Butter
Adds fat and richness, and helps the top brown.

The step that matters

Bake until delicately browned. Baking is what sets the egg and bread crumb mixture into a firm pudding. Stopping too early leaves it loose, while overbaking dries it out and toughens the egg.

Swap the chive

How well each one fits the dish's main ingredients (oyster, cream, bread, parsley, anchovy, pepper, butter):

  1. Shallotfits better
