What each ingredient does

Sponge cake
Forms the base layers and soaks up the custard as the dessert's body.
Custard
Adds moisture and a soft, creamy texture that softens the sponge.
Egg whites
Whipped with sugar to form a stiff, airy meringue that tops the dish.
Red jam
Adds sweetness and fruity flavour between the cake layers and on top.

The step that matters

Whipping the egg whites with the sugar until stiff. Egg white proteins unfold and trap air when beaten, forming foam. Under-whipped whites stay runny and slump into the custard, while over-beaten whites turn dry and grainy. Stiff peaks hold their shape on top of the cake.

Swap the pistachio

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits better
  2. Almondfits better
  3. Chestnutfits about as well
  4. Pistachiothe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
