Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the main lean meat body and savory flavor of the sausage.
Veal
Adds a mild, delicate flavor and a fine, tender texture to the filling.
Beef suet
Adds fat that keeps the sausage moist and juicy as it cooks.
Penny loaf crumb
Soaked bread absorbs liquid and helps keep the filling tender and binding.

The step that matters

Boil until cooked through. Raw pork and veal must reach a safe internal temperature. Gentle boiling cooks the sausages evenly without splitting the casings, which can happen with a hard boil.

Swap the sage

How well each one fits the dish's main ingredients (pork, veal, beef, pepper):

  1. Sagethe original
  2. Marjoramfits about as well
  3. Thymefits about as well
  4. Parsleyfits less well

Fit is the average pairing score against pork, veal, beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
