Baked Carp

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the carp and prepare the stuffing as for soles.

  2. Sew the carp up and brush it with egg yolk.

  3. Cover the carp with bread crumbs and baste with oiled butter.

Bake

  1. Place the carp in a deep dish with stock, onions, bay leaves, herbs, port wine, and anchovies.

  2. Cover and bake for 1 hour at 350°F (175°C).

Make the gravy and serve

  1. Keep the fish warm while you heat the cooking liquid with butter, mustard, cayenne, and soy sauce.

  2. Serve the fish garnished with lemon, parsley, and horse-radish, and pour the gravy into a sauce-boat.

What each ingredient does

Carp
Forms the main body of the dish, cooking through gently in the covered dish.
Egg yolk
Brushed on the fish to help the bread crumb coating adhere and brown.
Bread crumbs
Form a crisp, golden coating that browns in the oven.
Port wine
Adds depth, sweetness and aroma to the cooking liquid that becomes the gravy.
Anchovies
Melt into the cooking liquid, adding savoury depth and salt to the gravy.
Butter
Adds richness and body to the finished gravy.

The step that matters

Covering and baking the carp in the liquid. Baking covered in stock and wine keeps the fish moist while it cooks through, so it should not be left uncovered or over-baked, which would dry the flesh.
