Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Calf’s Liver and Bacon

Ingredients

Directions

Prepare

  1. Cut the liver into thin slices and match the number of bacon slices to the liver slices.

  2. Fry the bacon first and keep it warm on a dish.

Cook the liver

  1. Fry the liver in the bacon fat, seasoning with salt and pepper, and dusting with flour.

  2. Turn the liver occasionally to prevent burning.

  3. When done, arrange it around the dish with a slice of bacon between each piece.

Make the sauce and serve

  1. Pour off excess bacon fat.

  2. Add a small piece of butter and a little flour.

  3. Add lemon juice and water.

  4. Bring to a boil.

  5. Pour the sauce in the center of the dish.

  6. Garnish with lemon slices or forcemeat balls.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, cooked quickly to stay tender and mild.
Bacon
Its fat cooks the liver and adds salty, smoky flavour and savoury browning.
Flour
Dusted on the liver and added to the sauce to lightly thicken the pan juices.
Butter
Adds richness and a silkier texture to the finished sauce.
Lemon juice
Adds acidity that brightens the rich liver and bacon flavours.

The step that matters

Fry the liver until just done and turn it occasionally. Liver is lean and cooks fast; overcooking makes it dry and grainy, while turning helps it brown evenly without burning on the hot fat.
