Darioles a LA Vanille

Oven, in the book's wordsA good oven

Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Mix the flour with the milk to form a smooth batter.

  2. Stir in the cream, sugar, and well-whisked eggs.

  3. Beat the butter to a cream and add it to the mixture.

  4. Add essence of vanilla drop by drop until well flavored.

Fill and bake

  1. Line some dariole molds with puff pastry.

  2. Fill the molds three-quarters full with the batter.

  3. Bake in a 400°F (200°C) oven for 25 to 35 minutes.

Serve

  1. Turn out the darioles onto a dish without breaking them.

  2. Sprinkle with sifted sugar and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and set into a delicate, custard-like structure when baked.
Flour
Thickens the batter and gives the baked darioles their body.
Butter
Adds richness and a tender texture to the batter.
Cream
Adds fat and moisture, making the batter richer and softer.
Sugar
Sweetens the batter and helps the crust brown lightly in the oven.
Milk
Provides the liquid that turns the flour into a smooth batter.

The step that matters

Add essence of vanilla drop by drop until well flavored.. Vanilla is strong and can easily overpower the batter, so adding it gradually lets you judge the flavor before it becomes too intense.
