Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the stock

  1. Cut up the fish and place it in a pot with the other ingredients.

  2. Add the water and bring to a simmer.

  3. Simmer for 2 hours, skimming the surface carefully.

Finish

  1. Strain the stock through a fine sieve.

  2. Fry the vegetables and fish before adding the water for a richer stock.

What each ingredient does

White fish trimmings
Provide the core fish flavor and body to the stock as they simmer.
Beef or veal
Adds deeper, richer savoury flavour and body to the stock.
Onions
Contribute sweetness and aromatic depth as they cook into the liquid.
Carrots
Add gentle sweetness and rounded background flavor to the stock.
Lemon rind
Adds a bright, fragrant citrus aroma that lifts the stock.
Sweet herbs
Contribute aromatic herbal flavour that perfumes the stock.

The step that matters

Skim the surface during the simmer. Proteins and fat rise to the surface as the stock simmers. Skimming them off keeps the stock clear and free of greasy, off-flavours. Keeping the heat at a gentle simmer rather than a boil also prevents cloudiness.
