Gooseberry Jam

Ingredients

Directions

  1. Select unripe white or green gooseberries and remove the stems and tails.

  2. Boil the sugar with ½ pint of water for about 1 hour, skimming off any scum that forms.

  3. Add the gooseberries and simmer gently until the jam is clear and firm.

  4. Test a small amount on a plate; if it jellies when cold, it's done.

  5. Pour the jam into pots and let it cool.

  6. Cover with oiled paper and tissue paper brushed with the un-beaten white of an egg.

  7. Store in a dry place.
