Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Using scissors, cut off the tops and tails of the gooseberries.

  3. Place the gooseberries in a deep pie dish, piling them high in the center.

  4. Sprinkle the sugar over the gooseberries.

  5. Line the edge of the dish with short crust pastry and cover with another layer of pastry.

  6. Decorate the edges of the tart.

Bake and serve

  1. Bake for about 30 minutes.

  2. Before serving, sprinkle with fine sifted sugar.

What each ingredient does

Gooseberries
Provide the tart's main fruit filling, with their natural tartness balanced by the sugar.
Moist sugar
Sweetens the fruit and draws out juices, adding moisture to the filling.
Short crust pastry
Forms the crisp, rich case and top crust that hold the filling in place.
