Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Jelly, Orange, Moulded with Slices of Orange

Ingredients

Directions

Prepare

  1. Boil ½ lb of loaf sugar with ½ pint of water until no scum remains, removing it as it rises.

  2. Peel the oranges and slice them thinly without breaking the skin.

Assemble and set

  1. Layer the orange slices in a mold, pouring in the orange jelly and clarified syrup between layers.

  2. Chill the mold in ice until set, then wrap it in a cloth soaked in boiling water for a minute to release the jelly.

Serve

  1. Turn the jelly out carefully and serve.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Orange jelly
Sets the dish into a firm body that holds its shape when turned out.
Oranges
Provide the fruit slices and their bright citrus flavour and acidity.
Clarified syrup
Adds sweetness and moisture between the layers of fruit and jelly.
Loaf sugar
Sweetens the syrup and gives it body once boiled with water.

The step that matters

Chilling and releasing the mold. The jelly must be fully set before unmolding, or it will collapse. Brief contact with hot water loosens the outer layer so it slides out without tearing, but prolonged heating would soften the set jelly and spoil its shape.

Swap the orange

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits better
  4. Orangethe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
