What each ingredient does

Saddle of mutton
Is the main cut; its fat bastes and flavours the meat as it roasts.
Flour
Dredged onto the meat, it helps form a browned crust and thickens the drippings for gravy.
Gravy
Made from the pan drippings, it adds moisture and savoury depth to the carved meat.
Red-currant jelly
Its tart sweetness contrasts with the rich, fatty meat.

The step that matters

Baste the meat constantly. Mutton fat can scorch over a hot open fire before the lean meat cooks through. Frequent basting with the drippings keeps the surface moist and the fat from burning, and helps build a even, browned crust.
