Raised Pie, of Veal and Ham

Ingredients

Directions

  1. Make hot-water paste according to your recipe.

  2. Form the pie crust by hand or cut out pieces for the top and bottom, and a long piece for the sides.

  3. Attach the bottom and side pieces with egg, pinching the edges together.

  4. Line the pie with forcemeat, then add a layer of veal and season with salt, pepper, nutmeg, and allspice.

  5. Layer sliced bacon or cooked ham over the seasoning, followed by more forcemeat, veal, seasoning, and bacon, repeating until the meat is about an inch above the crust.
