Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Remove bones from the fish.

  2. Place the fish in a pie dish.

  3. Layer the fish with oysters and seasoning.

  4. Add the stock and a small amount of butter if desired.

Bake and serve

  1. Cover the pie with puff pastry.

  2. Bake at 400°F (200°C) for 30 minutes.

  3. Boil the cream with enough flour to thicken it.

  4. Pour the thickened cream into the pie before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold boiled sole or cod
Forms the main body of the pie and carries its flavour.
Oysters
Add briny, savoury flavour and a soft, juicy texture to the filling.
Cream thickened with flour
Adds richness and moisture, and the flour thickens it into a sauce.
Puff pastry
Forms a crisp, flaky, golden crust over the filling.

The step that matters

Thickening the cream with flour. Flour must be cooked by boiling so it thickens the cream smoothly. Uncooked flour leaves a raw taste and a grainy, pasty texture.

Swap the mace

How well each one fits the dish's main ingredients (pepper, oyster, fish, cream, flour):

  1. Nutmegfits better
  2. Capersfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against pepper, oyster, fish, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
