Rissoles or Croquettes

Ingredients

Directions

  1. Form the minced meat into balls and stamp them out into rounds with a cutter.

  2. Place the rounds on a floured dish and arrange them in a frying basket.

  3. Fry in plenty of hot fat until golden brown.

  4. For a better appearance, brush with beaten egg and dip in crushed vermicelli before frying.

  5. Alternatively, omit the pastry and shape the minced meat into walnut-sized balls, dip in egg and bread crumbs, and fry to make croquettes.

  6. Serve hot on a dish covered with a napkin and garnish with fried parsley.
