Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften and sweeten as they sweat, forming the flavour base of the soup.
Potatoes
Break down during simmering to thicken the soup and give it body.
Beef broth
Forms the liquid base that carries the flavour of the soup.
Stale bread
Thickens the soup as it absorbs liquid and softens into the broth.
Milk
Adds richness and a smooth, creamy texture to the finished soup.

The step that matters

Sweat the onions without browning. Browned onions turn the soup bitter and dark, while gentle sweating softens them and draws out their natural sweetness for a mild, balanced flavour.

Swap the celery

How well each one fits the dish's main ingredients (onion, potato, beef, sugar, milk):

  1. Garlicfits better

  3. Celerythe original
  4. Gingerfits about as well

Fit is the average pairing score against onion, potato, beef, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
