What each ingredient does

Rhubarb
Provides the main fruit body and tart flavour that the jam is built on.
Sugar
Sweetens the jam and, with boiling, thickens it into a spreadable set.
Lemon rind
Adds bright acidity and aromatic oils that balance the sweetness.
Butter
Added in small amount to help reduce foaming during the boil.

The step that matters

Boil quickly until it sets on a plate. Sugar and fruit pectin set only at a sufficiently high concentration reached by boiling. Undercooking leaves a runny jam, while overcooking can make it stiff and dull in flavour.

Swap the lemon
