Gravy for Veal

Ingredients

Directions

Make the veal stock

  1. Break the veal bone into several pieces and place in a stewpan with cold water, parsley, thyme, lemon rind, mace, and peppercorns.

  2. Cover and simmer gently for 1.5 hours until reduced to 1 pint.

  3. Strain the liquid into a bowl and let it cool.

Make the gravy

  1. Melt the butter in a small stewpan.

  2. Add the flour and stock, stirring until it boils.

  3. Pour off the fat from the pan used for the veal, keeping the brown sediment.

  4. Add the sauce to the pan, scraping the brown bits.

  5. Return the pan to the heat.

  6. Season the gravy with salt and sugar browning if desired.

  7. Strain the gravy over the veal and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal bone
Releases gelatin and flavour into the water, giving the stock body and depth.
Butter
Fat that combines with flour to form a roux, which thickens the gravy.
Flour
Starch that thickens the butter and stock into a smooth, pourable gravy.
Stock
Liquid that becomes the body of the gravy once thickened with the roux.

The step that matters

Add the flour and stock, stirring until it boils. Stirring keeps the flour evenly dispersed in the hot fat so it swells and thickens smoothly instead of forming lumps.

Swap the mace
