Curry of Rabbit

Ingredients

Directions

Fry the rabbit

  1. Fry the pieces of rabbit in hot fat for about 10 minutes, turning to fry evenly.

  2. Remove and let drain.

Make the sauce

  1. In a stewpan, combine fried onions, chopped sour apple (or gooseberries), and stock.

  2. In a bowl, mix curry paste, curry powder, salt, and ground rice with a little stock to form a smooth paste.

  3. Stir the paste into the sauce and simmer until the onions are soft.

  4. Rub the mixture through a fine sieve back into the stewpan.

Simmer and serve

  1. Add the rabbit pieces and simmer gently for 2 hours.

  2. Stir in the cream at the end of cooking.

  3. Taste and add lemon juice if more acidity is needed.

  4. Serve with boiled rice around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pieces of rabbit
Provide the main meat, which becomes tender during the long gentle simmer.
Sour apple
Adds acidity and body to the sauce as it softens and breaks down.
Ground rice
Thickens the sauce so it becomes smooth and lightly bodied when sieved.
Cream
Adds richness and a smooth, mellow texture to the finished sauce.

The step that matters

Rub the mixture through a fine sieve. Pressing the cooked onions, apple and thickened liquid through a fine sieve removes fibrous solids, giving the sauce a smooth texture before the rabbit is added.
