Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release collagen and gelatin into the water, giving the broth body and mouthfeel.
Carrots
Add natural sweetness and aromatic depth to the stock.
Turnips
Contribute mild sweetness and a subtle vegetable background flavour.
Onion
Adds savoury depth and aroma as it simmers in the stock.
Liebig’s extract of meat
Concentrates meaty savoury flavour, deepening the broth's taste.

The step that matters

Simmer gently for 2 hours, skimming occasionally. A gentle simmer keeps the broth clear, since rapid boiling emulsifies fat and cloudy particles into the liquid. Skimming removes impurities that would otherwise muddy flavour and appearance.
