Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Provides the sugar that yeast ferments into carbon dioxide and alcohol, giving the drink its fizz.
Toast spread with yeast
Supplies the yeast that drives fermentation, producing carbonation and flavour.
Bruised ginger
Adds the spicy, aromatic flavour that defines the beer.
Brandy
Added to the cask, it raises the alcohol content and helps preserve the drink.

The step that matters

Adding the yeast when the liquid is almost cold. Yeast is killed by hot liquid, so the mixture must have cooled enough before the toast spread with yeast goes in. Adding it too hot can stop fermentation entirely.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, lemon, spread, brandy):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Allspicefits less well

Fit is the average pairing score against sugar, lemon, spread, brandy. Candidates are from the same food group and used in at least 100 recipes.
