What each ingredient does

Rump of beef
Is the main cut that becomes tender and moist during long, slow braising.
Gravy or water
Provides the braising liquid that gently cooks the meat and keeps it moist.
Onions
Soften and sweeten as they cook, adding flavor to the braising liquid.
Carrots
Add sweetness and body to the braising liquid as they cook down.
Shallots
Melt into the braise, adding a mild sweet onion flavor to the sauce.

The step that matters

Covered, low simmer with continual basting. Gentle, covered simmering breaks down the tough connective tissue in rump slowly. Too much heat or too little liquid can toughen the meat or scorch the pan, so keep it at a gentle simmer and baste regularly.

Swap the onion
