Why it works: Nutmeg and almond match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 2,115 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
Bride Cake
Ingredients
Directions
The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Sift the flour and grated nutmeg together.
Add the currants, sultanas, mixed peel, and ground almonds to the flour mixture.
Melt the butter and treacle in a saucepan, then remove from heat and stir in the rum.
Pour the melted mixture into the dry ingredients and mix well.
Beat in the eggs one at a time until fully incorporated.
Bake
Pour the batter into a greased cake tin and bake in a moderate oven (350°F/175°C) for two hours.
After the first ten minutes, reduce the gas flame and turn it off for the last half hour.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Bind the batter and add structure as the cake sets in the oven.
- Butter
- Adds fat for a tender crumb and rich flavour.
- Flour
- Forms the main structure of the cake once baked.
- Sugar
- Sweetens the cake and helps it brown during baking.
- Ground almonds
- Add moisture and a dense, rich texture to the crumb.
- Treacle
- Adds moisture, dark colour and a deep molasses sweetness.
The step that matters
Turning down the heat after ten minutes. A long bake of a dense, fruit-heavy batter can dry out or scorch on the outside if heat stays high. Lowering the flame and switching it off for the final half hour lets the centre finish cooking gently.
Swap the currant
How well each one fits the dish's main ingredients (flour, butter, rum, sugar, nutmeg, almond, egg):

Fit is the average pairing score against flour, butter, rum, sugar, nutmeg, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
