Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Prepare the mackerel by removing the bones.

  2. Melt some butter in a pan and place the fish flat in it, skin side down.

  3. Chop parsley very fine and add powdered thyme, a quarter of a bay leaf, and a little grated lemon rind.

  4. Cover the fish well with pieces of butter.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C) for 20 to 30 minutes.

  2. Squeeze the juice of the lemon over the fish before serving.
