Why it works: Flour and nutmeg are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 18,623 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Almond Simnel
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 300°F (150°C).
Cream the butter and sugar together.
Beat the eggs well and add them to the mixture.
Mix the baking powder with the flour and gradually add it to the batter.
Stir in the mixed peel, currants, and nutmeg.
Grease and line a cake tin with greased paper, then half fill it with the cake mixture.
Add half of the almond paste (see below) on top of the mixture.
Fill the tin with the remaining cake mixture.
Bake for four hours.
Before the cake is fully baked, take the remaining almond paste, brush the top edge of the cake with egg white, and place a thick ring of almond paste around the edge.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
