Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter and sugar together until creamy.

  3. In a separate bowl, beat the egg yolks and stir in the grated chocolate.

  4. Add the chocolate mixture to the butter and sugar mixture.

  5. Mix the ground rice and flour together, then add to the batter along with the baking powder.

  6. Beat the egg whites until stiff and fold them into the mixture along with the vanilla extract.

Bake

  1. Pour the batter into a tin lined with greased paper.

  2. Bake for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks enrich the batter, while whipped whites add air that lightens the crumb.
Butter
Creamed with sugar, it traps air and adds fat for a tender, rich texture.
Flour
Provides the starch and gluten network that gives the cake its structure.
Grated chocolate
Adds the chocolate flavour and fat, contributing to richness and moisture.
Baking powder
Releases gas during baking, helping the cake rise.
Castor sugar
Sweetens the cake and helps trap air when creamed with butter.

The step that matters

Folding in the whipped egg whites. Whites beaten until stiff hold air that gives the cake its lift. Overmixing when folding deflates them, leading to a dense, heavy cake.
