What each ingredient does

Brown sugar
Provides the sweetness and molasses flavor that defines the toffee.
Butter
Adds fat for a rich texture and smooth, glossy mouthfeel.
Cream
Adds moisture and richness, softening the sugar's firmness into a creamy bite.
Swiss milk
Contributes milk solids that add creaminess and help the toffee brown gently while cooking.
Syrup
Interferes with sugar crystallization, keeping the toffee smooth rather than grainy.
Vinegar
Adds a little acidity that helps prevent sugar crystals from forming.

The step that matters

Boil until the mixture hardens when dropped in cold water. Sugar syrup must reach the correct concentration to set firm. Undercooking leaves the toffee soft and sticky, while overcooking makes it hard and brittle. Cold-water testing shows when the sugar has reached the right stage.

Swap the almond

How well each one fits the dish's main ingredients (sugar, syrup, vinegar, milk, butter, cream):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Peanutfits about as well
  4. Pistachiofits less well

Fit is the average pairing score against sugar, syrup, vinegar, milk, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
