What each ingredient does

Hare
Provides the main meat, which becomes tender through long, gentle stewing.
Bacon
Adds fat and savoury flavour that seasons the meat and the stewing liquid.
Calf's feet
Release gelatin into the liquid, giving the finished sauce body and a silky texture.
White wine
Adds acidity and aroma while helping to moisten and flavour the stew.
Onions
Soften and sweeten during stewing, adding depth to the braising liquid.
Carrots
Contribute natural sweetness and body to the braising liquid.

The step that matters

Seal the pan and stew gently for 3 hours. A tight seal keeps moisture in, and gentle heat lets collagen in the meat and feet break down slowly. Boiling would toughen the meat and cloud the liquid.
