What each ingredient does

Meat
Provides the main protein, which becomes tender through long, gentle simmering.
Onions
Browning them builds deep, sweet savoury flavour and body in the sauce.
Ghee
Carries the spices and adds rich fat that helps flavours bloom and brown the onions.
Almonds
Ground with rice water and cream, they thicken the sauce and add a creamy texture.
Chenna dal (split chickpeas)
Softens during simmering and helps thicken the curry into a fuller body.
Cream
Adds richness and a smooth, mellow texture to the finished sauce.

The step that matters

Add the almond and cream mixture to the meat. Stirring in dairy and ground nuts while the curry is very hot can cause it to split or turn grainy. Keeping the heat moderate helps the sauce stay smooth and creamy.

Swap the onion

How well each one fits the dish's main ingredients (clove, garlic, ghee, ginger, meat, turmeric, cardamom):

  1. Carrotfits better
  2. Shallotfits better
