Wine Vinegar
Ingredients
Directions
Put the vinous liquor into a recently used vinegar cask.
Add the wet fruit or stalks into a cask without a head.
Cover with a coarse cloth and place in sunlight for six days.
Stir the mixture into your vinegar.
In winter, keep it warm; in hot weather, place it in a sunny yard with a slate over the bung.
Allow it to ferment until it turns sour and becomes vinegar.
Once sufficiently sour, rack it into a clean vinegar cask, seal it, and store in your cellar.
