Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Directions

Prepare the carrots

  1. Scrape and clean the carrots, removing any blemishes, then wash and wipe them dry.

  2. Cut the carrots into quarter‑inch slices.

Make the soup

  1. In a large saucepan, melt the butter over low heat.

  2. Add the sliced carrots and stew gently for 1 hour without browning.

  3. Pour the brown gravy or soup and simmer for 50 to 60 minutes until the carrots are tender.

  4. Press the mixture through a sieve or strainer, adding salt and cayenne pepper as needed.

  5. Boil the soup gently for 5 minutes, skimming off any scum.

  6. Serve the soup hot with fried bread on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main body, sweetness and flavour of the soup, and thicken it as they soften.
Butter
Adds richness and carries flavour while the carrots stew gently in the pan.
Brown gravy or soup
Supplies the liquid base and savoury depth that the carrots simmer in.

The step that matters

Stew the carrots without browning. Keeping the heat low lets the carrots soften and release their sweetness. Browning would add bitter, roasted notes that change the soup's flavour and colour.

Swap the carrot

How well each one fits the dish's main ingredients (butter, pepper, bread):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Carrotthe original

Fit is the average pairing score against butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
