Vegetable Soup

Why it works: Onion and cucumber match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

What each ingredient does

Vegetable marrow
Forms the bulk of the soup and softens into a tender, mild body as it simmers.
Onions
Build savory sweetness and aroma as they soften and brown in the butter.
Cucumbers
Add moisture and a delicate, fresh flavor that mellows during simmering.
Apples or tomatoes
Add acidity and fruity sweetness that balance the curry powder.
Curry powder
Supplies the warm, aromatic spice flavor that defines the soup.
Butter
Carries the spices and adds richness and a rounded, savory flavor.

The step that matters

Sauté until lightly browned. Browning the marrow, onions, and cucumbers builds deeper flavor through the Maillard reaction. Crowding the pot or using too little heat causes steaming, which yields a flatter taste.

Swap the apple

How well each one fits the dish's main ingredients (butter, onion, cucumber):

  1. Avocadofits better
  2. Coconutfits better
  3. Mangofits better
  4. Applethe original

Fit is the average pairing score against butter, onion, cucumber. Candidates are from the same food group and used in at least 100 recipes.
