Why it works: Haddock and sauce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 200 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

What each ingredient does

Eggs
Bind the breadcrumb coating so it adheres to the fish during frying.
Breadcrumbs
Form a crisp, golden crust that browns in the hot oil.
Haddock
Provides the flaky, mild white fish that is cooked through inside the coating.

The step that matters

Fry until golden brown. The oil must be hot enough to brown the breadcrumb coating quickly. If it is too cool, the coating absorbs oil and turns greasy and soft before the fish is cooked through.
