To Scallop Otstees
Ingredients
Directions
Open the oysters carefully and scald them in their own liquor.
Wash the oysters in the liquor to remove grit and remove the gills.
Butter the scallop shells and sprinkle fine bread crumbs over them.
Layer the oysters, bread crumbs, and small bits of fresh butter in the shells.
Pour the strained oyster liquor into the shells.
Top with a thick layer of bread crumbs and moisten with clarified butter.
Place the shells in a Dutch oven over a clear fire, turning often until browned.
Serve immediately, adding optional seasonings as desired.
