Directions

Make the gravy base

  1. In a large thick stewpan, lay the sliced ham.

  2. Place the veal on top of the ham.

  3. Pour in ½ pint of broth and heat over a brisk fire until well reduced.

  4. Insert a knife into the meat and continue stewing slowly.

  5. Shake the stewpan frequently and watch the gravy to prevent burning.

  1. When the gravy is a deep amber color, add enough boiling broth to cover the meat.

  2. Add parsley, mushrooms, green onions, mace, peppercorns, and celery.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat and gelatin that give the gravy body and richness as it stews.
Ham
Lends salty, savory flavor and fat to the base as it cooks down.
Broth
Forms the liquid that extracts flavor from the meat and reduces into the gravy.

The step that matters

Watching the gravy as it turns deep amber. Once the meat and pan drippings brown and reduce, they can scorch quickly. Shaking the pan often and watching closely prevents burnt flavor while building a rich colour.

Swap the mace

How well each one fits the dish's main ingredients (ham, veal, parsley, mushroom, onion, celery):

  1. Thymefits better
  2. Marjoramfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against ham, veal, parsley, mushroom, onion, celery. Candidates are from the same food group and used in at least 100 recipes.
