Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Bulk of the purée, giving the sauce its body and mild, starchy sweetness.
Rich cream
Adds richness and a smooth, silky mouthfeel to the finished sauce.
Veal gravy
Supplies savoury depth and liquid, thinning the purée into a pourable sauce.

The step that matters

Keep the sauce stirred until it boils. Cream and starchy purée can scorch or separate on the base of the pan if left still. Constant stirring keeps the heat even and the sauce smooth.

Swap the mace

How well each one fits the dish's main ingredients (chestnut, veal, lemon, pepper, cream):

  1. Sagefits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chestnut, veal, lemon, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
