Why it works: Shallot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,737 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Panada
Ingredients
Directions
Cover the panada with milk or cream and steam for 30 minutes.
Drain excess liquid and squeeze the panada dry in a thin cloth.
Place it in a small saucepan and add enough white sauce or gravy to absorb.
Stir constantly over low heat until it forms a dry paste that sticks to the spoon.
Mix in the unbeaten yolks of 2 eggs and let it cool before using.
In a separate pan, brown ham, shallots, bay leaf, mushrooms, parsley, cloves, and mace in butter.
Add broth or gravy and simmer for 20-30 minutes to develop flavor.
Strain the mixture over the panada and boil it into the bread.
